12 oz Ronzoni Gluten Free® Rotini
3/4 cup red onion, thinly sliced
4 Tbsps lemon juice, divided
1/4 tsp salt
2 Tbsps chopped capers
2 tsps Dijon mustard
1 tsp finely grated lemon zest
3/4 tsp ground black pepper
1/4 cup olive oil
8 oz smoked salmon, thinly sliced
4 Tbsps fresh dill, chopped

Cooking Directions:

1.    Prepare pasta according to package directions. Drain, rinse with warm water* and set aside.

2.    Meanwhile, toss onions with 2 tablespoons lemon juice and salt; let stand for 25 minutes.

3.    Whisk remaining lemon juice with capers, mustard, lemon zest and pepper, whisk in olive oil until combined. Toss cooled, cooked pasta with smoked salmon, marinated onions, dill and dressing mixture.
