12 oz Ronzoni Gluten Free® Penne Rigate
2 cups black beans, cooked
1 cup (10 oz.) frozen corn, thawed and drained
1 cup fresh tomato, chopped
1 cup chopped orange bell pepper
3 Tbsps green onions, sliced
1/2 cup chopped fresh cilantro leaves
1/3 cup canola oil
1/4 cup fresh lime juice
1 Tbsp honey
1 each garlic clove, minced
1 tsp fresh lime zest
1 tsp ground cumin powder
1 tsp chili powder
1/2 tsp salt
1/2 tsp ground black pepper
1 each avocado, diced (optional)

Cooking Directions:

1.    Prepare pasta according to package directions. Drain, rinse with warm water* and set aside.

2.    Toss pasta with black beans, corn, tomato, orange pepper, green onions, and coriander.

3.    Whisk canola oil with lime juice, honey, garlic, cumin, chili powder, lime zest, salt and pepper until combined. Toss with the pasta mixture. Stir in the avocado (if using) just before serving.
