12 oz Ronzoni SuperGreens™ Rotini
1 1/2 cups fresh green beans, diced
2 cups grape tomatoes, halved
1/2  cucumber, diced
green onions, thinly sliced
1 large avocado, sliced
1/2 cup fresh basil leaves
1/4 cup lemon juice
2 Tbsps water
2 Tbsps olive oil
garlic cloves, minced
1 tsp grated lemon zest
1 tsp salt
1/2 tsp freshly ground black pepper

Cooking Directions:

1.  Cook green beans in a large pot of boiling, salted water for 4 minutes; add pasta after 1 minute of cooking. Drain and rinse under cold running water; drain well. Toss with grape tomatoes, cucumber and green onions.

2.  Meanwhile, combine avocado with basil, lemon juice, water, olive oil, garlic, lemon zest, salt and pepper in a food processor or blender. Blend until smooth (add a little extra water if needed to adjust to a pourable consistency).

3.  Add dressing to pasta mixture and toss to coat.
