12 oz Ronzoni SuperGreens™ Rotini
4 Tbsps olive oil, divided
12 oz salmon fillets
3/4 tsp salt
3/4 tsp ground black pepper, divided
1 cup red onion, sliced
1 cup snow pea pods, sliced
1 cup chopped orange bell pepper
2 Tbsps lemon juice
1 Tbsp fresh oregano, chopped
1 tsp honey
garlic cloves, minced
1/2 cup crumbled feta cheese
  lemon wedge

Cooking Directions:

1.  Heat 1 tablespoon olive oil in a large nonstick skillet set over medium heat. Season salmon with 1/4 teaspoon each salt and pepper. Add to skillet and cook, covered and turning once for 8 minutes or until cooked through. (Fish will flake when lightly tested with a fork.) Remove to a board.

2.  Add onion, snow peas and orange pepper to the skillet. Stir fry for 5 to 6 minutes or until softened.

3.  Meanwhile, prepare pasta according to package directions.

4.  Whisk remaining oil with lemon juice, oregano, honey, garlic and remaining salt and pepper. Flake the salmon into bite-sized chunks. Add hot pasta, salmon, oil mixture and feta to the skillet. Toss just until coated and warmed through. Serve warm with lemon wedges on the side.
