12 oz Ronzoni SuperGreens™ Rotini
1 Tbsp canola oil
sweet potato, peeled and diced
bacon slices, chopped
onion, minced
  white wine vinegar
2 Tbsps Dijon mustard
2 Tbsps maple syrup
garlic clove, minced
1/2 tsp salt
1/2 tsp ground black pepper
6 cups fresh baby spinach leaves

Cooking Directions:

1.  Prepare pasta according to package directions for firm.

2.  Meanwhile, heat oil in a large nonstick skillet over medium heat. Add sweet potato, bacon and onion; cook, stirring occasionally, for 10 minutes or until bacon is browned and potato is tender.

3.  Whisk vinegar with mustard, syrup, garlic, salt and pepper. Stir into skillet followed by hot pasta and spinach. Toss until coated. Serve warm.
