12 oz Ronzoni Gluten Free® Rotini
1/2 cup scallions, sliced
1/3 cup red wine vinegar
2 Tbsps chopped parsley
1 tsp fresh basil leaves, chopped
garlic clove, minced
1/4 tsp salt
1/4 tsp ground black pepper
2/3 cup vegetable oil
3 medium tomatoes, cut into wedges
1 small cucumber, thinly sliced
1 medium green pepper, cut into strips
6 oz button mushrooms, quartered

Cooking Directions:

1.  Prepare pasta according to package directions; drain, rinse with warm water* and set aside.

2.  Meanwhile, in a large bowl, combine scallions, vinegar, parsley, basil, garlic, salt and pepper. Set aside 10 minutes. 

3.  Add remaining ingredients and cooled pasta. Toss lightly. Refrigerate to blend flavors. 

*To ensure good taste and texture, it’s important to rinse Ronzoni Gluten Free® pasta with warm water after draining.
